Cranberry Toasted Pecan Crackle Cake *Johnny Special* Old Fashioned Coffeecake
There is a brief history behind this cake we want to speak upon as it may bring some more insight into this Johnny & Elle’s Delicacy. This is Johnny’s first coffeecake recipe. One of Johnny’s experiments with flour and fat types, it was late fall and cranberries were on sale everywhere., and he didn’t have any recipes in his notebook using cranberries. Johnny wanted to make something delicious, tart and sweet, nutty and buttery, textured crackle, with woody earthy flavors. This cake is the culmination of a chef that didn’t bake, a cabinet full of ingredients, and seasonal timing come together. We adapted to use dried cranberries in this cake to make it shelf stable for shipping, but this is our first, and only, coffeecake recipe.
With dried cranberries, toasted pecans, pure cane sugar, yogurt, and rich butter, this cake has a crispy outer edge, dense interior, and crackling pops of flavor throughout. This cake was designed to be shared over conversation and coffee, or brought out after dinner with cocoa or drinks. A beautiful dessert for the holidays, but wonderful all year round.
What makes ours excellent: This recipe was literally created by mixing ingredients, taking notes, adapting, and repeating the process with no base or boundaries to work off of, which makes it unconventional in the field of cakes. We use a pure cane sugar and butter coating on the cake pan for a crackly, sweet, buttery outer surface. A wonderfully balanced texture and flavor profile, this is actually “Johnny’s First Special.”
