Johnny's Sweet Wintery Spiced Nuts (Almonds, Pecans, Walnuts and Wintery Spice!)
At the start of Johnny’s baking adventure well over a decade ago, Johnny wanted to create a better version of those cinnamon roasted nuts you see at malls, holiday markets, and seasonal bakeries. There was just ‘something’ lacking from those elaborate sugar roasted nut theatrics that are put on by the makers. The aroma was always better than the product, & we wanted to change that.
Removing the ‘show’ from the experience of getting sweet roasted nuts leaves only the final product. Johnny learned the basics of roasting nuts in whipped egg whites, sugar, and spices and then began playing with flavors and textures. Each year since, around the holidays, Johnny makes pounds and pounds of these sweet, sultry, wintery spiced nuts for gifts for friends and family.
Offering a mixed blend of about half Almonds, about a quarter walnuts, and about a quarter pecans this contrast of texures in crunchy almonds and tender meltaway walnuts, and pecans somewhere in the middle there, and enhanced with crispy sugar and egg white roasted in the oven, and blended with wintery spices like cinnamon, clove, nutmeg & allspice, this is Johnny’s version of perfectly flavored and textured sweet roasted wintery spiced nuts!
What makes ours excellent: Raw cane sugar adds some deep, rich flavor that works well with the walnuts and pecans. The ratio of wintery spices plays perfectly with the balance of sweet and sultry flavors. The different roasting times of each type of nut adds to the textural contrast and balance of the whole mix, creating an inviting and multi-faceted experience.
